Hello. Is it possible to unpair a male and female once they are paired for breeding? Thank you for your responses.

Break Free potion can be picked up free in the customer pavilion or administered through the cattery (even to in-world cats, if you have a cattery dock rezzed where your cats are). Info about the potion is here: https://kittycats.ws/manual/article.php?id=66
